2020 Sauvignon Blanc - Sémillon
The grapes for this were sourced from the Thomas Vineyard - Tightrope Estate on the Naramata Bench. The Sauvignon Blanc was destemmed, crushed, then pressed, while the Semillon was whole cluster pressed. Fermentation started slowly at low temperatures (12°C) to preserve the aromatics and took 28 days to complete. Post fermentation, the wines were blended together to make this wine reminiscent of a traditional Bordeaux blend.
